Black bean quesadilla recipe

No cooking skills required. Just pop this tasty dish into a microwave or air fryer (for extra crispiness) and enjoy. For a lower carbohydrate meal use a low carb wrap.

  • Drain the beans, then add to a bowl with the cilantro and seasoning blend and mash with a fork
  • Dice bell peppers, shred the leafy greens by hand if desired
  • Portion the leafy green onto the tortillas, then portion a couple spoons of the bean mixture onto each tortilla, then layer with salsa, cilantro, and cheese
  • Place the tortillas together or add another on top of each, and microwave for 1-3 minutes
