Drain the can of beans and rinse with water. Place the beans in a large bowl – season with the spice mix, toss in cilantro, and sprinkle with lime juice.
With the back of a fork, crush the beans and other ingredients to form a paste. Spread the paste on one corn tortilla, layer on corn, diced onion, and a handful of cheese, then top with another bean-smeared tortilla.
Place on a microwavable plate and microwave for 1 minute or until the cheese melts. Top with your favorite salsa!
