Instructions
  1. Peel and cube the sweet potatoes, dice the onion, dice garlic if including.
  2. Rinse and drain the black beans
  3. Add to instant pot 4 cups of broth, black beans, crushed tomatoes, salsa, sweet potatoes, onion, and any additional seasonings.
  4. Pressure cook for 45 minutes, and serve! You can also make this in a crock pot, or on the stove top just keep the heat low and cook for longer. Chili is done when the sweet potatoes are soft.

You can add or take out anything you want with this recipe! If you do not want it to be vegetarian you can add a pound of ground beef, or some shredded chicken, or even use a mock ground beef to keep it vegetarian but add more protein! You can top it with cheese, sour cream, tortilla chips, avocado, or anything else you desire!

Seasonings are also all up to you, you can make it as spicy and flavorful as you like, though I always recommend garlic, cumin, and paprika and use about a tablespoon of each to start. You can always add more seasoning later, but can’t take it out once it is in!

Optional Seasonings

  • Garlic
  • Paprika
  • Hot sauce
  • Cumin
  • Black pepper
  • Chili powder
  • Chipotle chili powder
