Tired of eating the same ol’ breakfast everyday? Switch it up with this recipe which takes little time to prepare and cooks in around 2 hours. It is lower in carbohydrates and has an adequate amount of protein and fat to help you feel full. You can cook it in a Hot Logic Lunchbox, Instant Pot, slow cooker, or oven. (Cooking times will vary depending on the cooking method)

Ingredients
- 1/2 bell pepper cut lengthwise, seeds removed
- 1 egg
- 2 Tbsp cheddar cheese shredded
- 2 slices ham chopped
- vegetable spray
- salt and pepper to taste

- Cut bell pepper lengthwise and remove seeds. Spray inside and outside of pepper with vegetable spray. Place in Hot Logic Lunchbox container.
- Crack egg inside of pepper. Add salt and pepper. Chop ham slices and add on top of egg. Sprinkle with cheese.
- Cook in Hot Logic Lunchbox for around 2-5 hours, depending on how you like your egg cooked. Enjoy!
Recipe Notes
Other toppings could include hot sauce, green onions, bacon, cherry tomatoes, and fresh herbs (parsley, cilantro, basil, etc.). Make sure to keep the lunchbox flat while cooking to prevent the egg and toppings from falling out of the pepper.
