Ingredients
- 1 cup mushrooms sliced (optional: sub sweet potatoes)
- 1 cup carrots chopped
- 1 1/2 lbs chicken breasts boneless, skinless
- 1 tbsp fresh ginger or ginger paste
- 3 tbsp coconut aminos OR soy sauce coconut aminos are gluten free
- 3 tbsp rice wine vinegar
- 2 tbsp honey or maple syrup
- 1/4 cup chicken broth
- 3 clove galic minced
- 1/4 cup ketchup optional

Instructions
- Place chopped vegetables in the bottom of the Instant Pot.
- Top with chicken breasts.
- In a small bowl, combine remaining ingredients and mix well.
- Pour sauce over chicken.
- For the Instant Pot, use the manual button and set for 15 minutes.
- Use quick pressure release method, shred chicken and serve.
- You can add instant or microwave brown rice as a side.
