Ants on a Log

Prep Time: 10 minutes

Yield: 6 logs

Ingredients: 

  • 3 celery sticks
  • 1/4 cup natural or powdered peanut butter
  • Small handful of raisins

Instructions:

  1. Wash the celery sticks and cut each stick in half.
  2. Add peanut butter into the concave part of each celery stick and spread.
  3. Push raisins into the peanut butter to represent *ants*.

Recipe Notes:

  1. Alternative to celery include:
    1. Carrots
    2. Cucumber (slice in half, length ways and scrape out seeds)
    3. Banana (slice in half, length ways)
    4. Apple (cut into wedges)
    5. Pear (cut into wedges)
    6. Peach / Nectarine (cut into wedges)
  2. Alternatives to peanut butter include:
    1. Any nut butter
    2. Cream cheese
    3. Cottage cheese
    4. Hummus
    5. Mashed avocado/guacamole
    6. Greek yogurt
    7. Other dips/spreads: beet root dip, carrot hummus, bean dip, tzatziki, etc.
  3. Alternatives to raisins include:
    1. Other dried fruit (apricot, dates, figs, pineapple, etc.) cut into raisin-sized pieces
    2. Peas
    3. Sweetcorn
    4. Olives
    5. Cherry tomatoes
    6. Grapes
    7. Blueberries
    8. Seeds
    9. Nuts
High Protein Cheerio Trail Mix

Cook Time: 10 minutes

Servings: 5 cups

Ingredients: 

  • 1/3 cup cranberries, dried
  • 1/3 cup golden raisins
  • 1/4 cup honey
  • 1/4 cup natural nut butter of your choice
  • 1/2 cup cashews
  • 3 cups Cheerios plain or honey nut
  • 1/4 cup pepitas (pumpkin seeds)
  • 1/4 cup walnuts
  • 1/4 cup butter, unsalted

Instructions: 

  1. In a large bowl, mix cranberries, golden raisins, cashews, Cheerios, pepitas and walnuts together.
  2. In a small sauce pan over medium heat, melt the nut butter, honey, and butter together. Pour over Cheerio mixture and stir to combine.
  3. Store in the refrigerator for 2 hours before consuming.

Store in refrigerator to help prevent mixture become melted.
